I love goat cheese! It's really good for anything...sandwiches, wraps, salads...it just adds a nice taste. Also, I've always loved strawberries...and had some extra chicken in the fridge.
ingredients
-two slices whole wheat bread
-1 ounce goat cheese
-1/2 cup baby spinach, chopped
-1/4 cup strawberries, sliced
- chicken (optional)
- 2 tablespoons balsamic vinaigrette
directions
1. Place the goat cheese in a bowl and microwave it in 15 sec segments until it is easy to spread on the bread.
2. Layer the strawberries, spinach, and chicken if using on top.
3. Drizzle balsamic vinaigrette and place the other slice of bread on top.
4. Grill in panini press. (Or, if you don't have one, like me, although I hope to get one for my birthday, grill the old fashioned way in the pan on the stove.
