I think I have an addiction to sweet potatoes. No joke. People dream of eating chocolate all day, and all I want is a sweet potato. This "addiction" is a good thing, since sweet potato is so versatile and packed with so many important vitamins and fiber!
Ingredients
-1/2 cup of rolled oats
-1 banana, mashed
-1 tablespoon of nut butter (I like almond butter)
-about a 1/2 cup of milk (enough to cover the oats)
-1/2 a small swee potato, mashed
Directions
1. Melt nut butter in the microwave for about 15 seconds. Mash banana and sweet potato in a bowl with but butter.
2. Meanwhile, mix oats and milk in a container. Add banana mixture, and leave in the fridge overnight.
3. In the morning, take out your oats and enjoy! Some people prefer heating it up for about a minute, but I like it cold.
