I just love my panini maker!!!! I've been doing a lot of experiments on the weekends. Counting down the days until summer so I can use it every day!
ingredients:
-1 tortilla (whole wheat or white, I used a tomato basil).
-1/2 cup chicken
-1/4 cup shredded cheese
-1 tablespoon mayo (or, plain Greek yogurt works well for a healthier option)
-1 teaspoon Dijon mustard
directions:
1. In a bowl, combine chicken, mustard, and mayo.
2. Spread on half of the tortilla.
3. Sprinkle with cheese.
4. Fold in half and grill on panini press (or pan).
