I love the nights when my parents are out and I have to prepare dinner for myself...I get to be creative! Here's an easy, healthy salad filled with lots of fresh ingredients perfect for autumn. Any dressing works, but I whipped up an easy, tangy one with apple cider vinegar.
ingredients
-1/2 cup turkey, chopped
-a few handfuls of spinach leaves
-1/4 cup shredded carrots
-a handful of raisins
-a handful of walnuts
-1/2 cup cooked broccoli
-1/2 cup apple, chopped
directions
1. Mix all ingredients together in a bowl.
2. Top with dressing and mix well.

Mix a tablespoon or two of Apple cider vinegar and a tablespoon or two of plain Greek yogurt to taste.
