I was hesitant on trying this one...but I took the chance and it turned out absolutely delicious! Don't judge food by it's looks! ;)
a strange panini
(avocado-sweet potato panini)
ingredients:
-half of an avocado, mashed with lemon juice and pepper
-half a sweet potato, cooked and sliced thin
-1/2 cup chicken, if desired
-1/4 cup goat cheese, crumbled
-1 tablespoon honey mustard (I use Bolthouse Farms yogurt dressing)
-2 slices whole wheat bread
directions:
1. Spread avocado on one slice of bread.
2. Sprinkle goat cheese on top, covering the avocado.
3. Add chicken pieces if desired.
4. Layer sweet potato on top.
5. Spread honey mustard on other slice of bread and place it on top.
6. Grill in a panini press until nice and toasty!

-avocados are the only fruit rich in heart healthy unsaturated fats!
-sweet potatoes are a great source of cartenoids like vitamins A and C because of their orange flesh.
