Kale. Everyone in the health world has been talking about it. So why haven't I ever purchased it? I don't know, actually. Yesterday, while grocery shopping, a fresh bunch of organic kale was staring me down, so I decided to pick it up and give it a shot. I'm glad I did.
I went to a Sur La Table cooking class last week with my aunt, and we learned how to cut kale properly, so I used that method here!
I was already curious if creamy chicken salad would combine with quinoa, and it did! I based this off of my chicken salad panini, with the addition of kale.
Ingredients:
-1 stalk kale
-1/2 cup cooked quinoa
-1/2 cup chopped chicken
-1/4 cup chopped apples
-1/4 cup chopped cucumber
-1 tablespoon of plain green yogurt
-1 tablespoon of Dijon mustard
