I saw this recipe on Cassey Ho's Blogilates channel, my favorite Pilates channel on YouTube, and I had to give them a try! I love sweet potatoes, peanut butter, and pancakes! These turned out awesome, and they're super healthy too!
Ingredients:
-1/2 cup oat flour (blend rolled oats in a blender!)
-1/4 cup mashed sweet potato
-1/4 cup plus 3 tablespoons of milk
-1 tablespoon maple syrup
-1 flax egg (mix 1 tablespoon of ground flax with 3T of water and chill in the fridge for 15 min)
-1/2 tsp baking powder
-1/2 tablespoon cinnamon
-1 teaspoon of coconut oil
-pinch of salt
-melted nut butter and pecans for topping! (I used PB2)
Directions:
1.Mix everything in a bowl.
2. Form into three pancakes, cook over medium high heat for a few minutes, flip, and cook for a few more minutes.
3. Top with melted nut butter and pecans and enjoy!
