It's finally the first day of summer! That means less stress, relaxation,friends,family, and fun. It also means I have more time to spend in the kitchen and blogging.
Summer is a time full of fresh fruits and vegetables to utilize in my recipes, as well!
Ingredients
-1/2 cup quinoa, cooked
-1/2 cup chopped asparagus spears
-1/2 an avocado, diced
-1/2 a cup of chicken, chopped (optional)
-a sprinkle of feta cheese
-a sprinkle of sliced almonds
-a tablespoon of lemon dressing (if you don't have this, you can season your salad with lemon juice, salt, garlic, and olive oil)
Directions
1. Mix everything together and enjoy!
