This has always been one of my favorites. When I'm on the go, I put the same ingredients in a whole wheat wrap instead of on top of quinoa!
Ingredients
-1/2 cup cooked quinoa
-1/4 cup chopped roasted red peppers
-6 olives, sliced
-sprinkle of crumbled feta cheese
-1/2 an avocado, diced
-1/2 cup cooked chicken, diced
-a drizzle of balsamic vinegar
Directions
1. Mix everything in a bowl and enjoy!
