Who doesn't love carrot cake? If you ask me what my all time favorite dessert is, it'd be carrot cake. When I make carrot cake, I load it with fresh grated carrots, raisins, pecans, coconut, applesauce, pineapppe, and spices. The best part is a thick layer of my homemade cream cheese frosting.
I had some leftover carrots laying around in the back of the fridge back when I made carrot cake for my mom's birthday, so I decided to turn my oatmeal into carrot cake. However, it's a lot healthier than cake! ;)
Ingredients
-1/2 cup oats
-1/2 cup milk
-1/2 a banana, mashed
-1/4 cup grated carrots
-a tablespoon or two of maple syrup
-a tablespoon or two of coconut
-a tablespoon or two of raisins
-sprinkling of cinnamon, ginger, nutmeg, and cloves
Optional: diced pineapple or applesauce for sweetness
1. Cook the oats with the milk (I cook the quick one-minute rolled oats for 1 minute in the microwave)
2. Add mashed banana and cook for 30 more seconds.
3. Add the rest of ingredients, and enjoy!
